Vegan Shawarma Rice

This is my Simple, Quick & Delicious Vegan Shawarma Rice. Hope you'll enjoy it too.


For the Sauce:
  • 1 cup Roasted Cashew nuts
  • 1/2 cup of Water
  • 4 gloves of Garlic
  • 2 tsp of ground Black pepper
  • 2 pcs of Kalamansi juice or 1tsp of Lemon
For the Tofu:
  • 4 pcs of Tofu (from our wet and dry market cost around 20pesos)
  • Oil
For Serving:
  • 3-4 pcs chopped tomato
  • 1 pc of chopped  Cucumber
  • 100g of chopped Romain Lettuce
  • 1 chopped white Onion

Directions:

For the Sauce
  1. Place the Cashew nuts in a bowl with hot water and let them soak for 5-10 minutes then drain the water.
  2. After soaking, place Cashew nuts, water, garlic, black pepper and calamansi in food processor or blender
  3. Blend it for about 1-2 minutes then separate

For the Tofu
  1. Drain the water and slice the tofu in small square parts
  2. Place the tofu in hot pan and cook it until golden brown then separate
For Serving
  1. Mix tomato, cucumber, white onion and lettuce in a bowl
  2. Serve with Rice and Enjoy :)
